My friend is a celiac and I want to make a birthday cake. Please help!? I went to a health food store for wheat and gluten free flour and they told me it would be good for him. I bought some chocolate cooking which I am sure it is ok, but I'm not 100% of what I should look for / avoid. Any help would be appreciated. This is my first time making a birthday cake!

My son and I are both celiac and had to cook for us, many things that we acquired, we could not eat. First thing to do than what you cook foods in a gluten-free. This may mean that you need to cook in her kitchen. Gluten-free flours work best in combination, the best way to make the cake without having to purchase 3-5 different meals is to buy a cake mix ready to use. Namaste and Pamela are both great brands, I do not remember your hand if Bob's Red Mill makes a cake mix, but if they do, it is also an excellent choice.
For baking chocolate, call the company (the number should appear on the label) and ask if it is gluten free and made on dedicated hardware. Hershey's and Nestle are both good customer service, to any other company should be able to tell you if their product is gluten-free.
I advise you to use the cake mix, the health food store should let you return / exchange of flour that you bought. gluten free cooking is a bit like a science experiment otherwise:)
With the egg substitute, I suggest you use a value of an egg more than the recipe calls for - it will help a lot with the fermentation and humidity.

we replace the eggs with applesauce .. Read the chocolate is not all free gluttonous

4 eggs
