Almond butter is like peanut butter, but without the peanuts. This makes the spread less salty and also a great alternative for people allergic to peanuts. Several studies have been conducted with all the results found that eating nuts is linked to lower risk of heart disease.



Almond butter can be bought in most health food stores, but may also be done at home. I have seen recipes that call for blanched almonds only, run through a food processor until a butter forms. Personally, I prefer a little salt in my spread.



To create the spread with a little salt, start with a cup of blanched almonds. Place nuts in food processor with ¼ teaspoon of sea salt. Process.



If you want a chunky consistency, chopped ¼ cup blanched almonds and add after the treatment.



If you want your stream a bit smoother, you can add oil in food processor. Try about ½ tablespoon.



Use almond butter that you can use peanut butter. Use it on sandwiches, toast, muffins, on, on celery, etc.



Once you've done a lot, what about using it to make cookies with almond butter? Again, for those allergic to peanuts they are an excellent alternative. Here are just a wonderful recipe for these cookies, using Maple as a sweetener:



The almond butter cookies



1 cup whole wheat pastry flour, sifted before measuring


1 cup almond butter


¼ cup canola oil


¼ cup maple syrup


½ tsp teaspoon vanilla


¼ c. teaspoon salt



Preheat oven to 300 degrees F. Lightly grease a baking sheet. Mix the butter and almond oil, beating until smooth. Combine maple syrup and vanilla.



In another bowl, stir together flour and salt. Add mixture to butter mixture and stir almonds until combined. Cover bowl and refrigerate for 10 minutes.

Roll the dough into 3/4-inch balls. Place on a baking sheet, then flatten. If you want the lines "that cookies have peanut butter with a fork so flattern. Bake in preheated oven for 25 minutes, until funds are lightly browned. Let cool for a few minutes on the baking sheet, and then transfer to a cooling rack.


Personally, I love a good old fashioned almond butter and jelly. Like to experiment with your almond butter and improve your health at the same time.
